Cajun White Beans and Rice
1 lb great northern white bean
water to cover the beans, plus 2 inches above
3-4 bacon strips, diced
1/4 cup each chopped onions, bell peppers, and celery
salt and pepper
1/4 cup cooking oil
Let beans cook overnight in the slow cooker on low. Saute bacon, onions, peppers and celery in oil for 5 minutes or until tender. Add to slow cooker with beans.
Add salt and pepper. Cover and cook on LOW for 5 to 6 hours. Serve over rice.

This is JUST the recipe I’m looking for! –Caught a great deal on white beans a while back and been searching for a good recipe. Think I’ll add some Frank’s RedHot Wings Sauce (sounds weird, but very good stuff) for a little kick.

A little kick is always a good thing! LOL! Make whatever changes you need to the recipe to satisfy your family’s preferences…make it your own!
