This an easy recipe to prepare ahead and take on a camping trip or to prepare for your next cook-out on the deck for the family and/or guests. It also makes a great dinner salad for just two!
Caesar Salad with Garlic Croutons
1 cup greek yogurt1/2 cup mayonnaise
1/4 cup grated parmesan cheese
2 cloves of garlic
1 tsp salt
1/2 tsp pepper
juice of one lemon
1/4 cup of olive oil
1 bag of chopped romaine lettuce
shaved parmesan
garlic-flavored croutons (or make your own)
Blend the greek yogurt, mayonnaise, grated parmesan, garlic, salt and pepper, and lemon juice in a blender or food processor. You can also finely chop the garlic and then whisk all of the ingredients together.
Once those ingredients are blended, slowly pour in the olive oil as it is continuing to blend.
Toss the chopped Romaine lettuce with the dressing until it is completely coated. Top the salad with garlic croutons and shaved parmesan! A little extra cracked pepper on top is also delicious!
Note: For camping, pour the dressing into a baggie or container to stash in the cooler.
