Usually when I cook cabbage, I will cook 2 so that I make several recipes throughout the week.
1 head cabbage, shredded & cooked for 10 min in Boiling water
4 cups water
2 tablespoons butter
1/2 teaspoon salt
3/4 cup dry bread crumbs (divided)
1/2 teaspoon pepper
1 beaten egg
1-1/2 cup grated cheese (divided)
1-1/2 cup heavy cream
1/4 pound bacon
Brown bacon, set asideBeat egg, cream and seasonings together.
Layer cooked cabbage in casserole pan with egg mixture and remaining ingredients, except bacon. Reserve some of the bread crumbs and cheese for topping.
Place chopped bacon on top of casserole, add a couple pats of butter and bake in a for 30 minutes at 350F

This sounds very interesting. I bet with a few ‘tweeks’ this could work with the South Beach Diet…hhmmmmm…gonna have to think on this.
