Most folks I know love pancakes. This recipe is no exception.
Buttermilk Pancakes
1 cup flour
1/2 cup buttermilk
1/2 cup milk
1 egg
1 heaping teaspoon baking powder
1 scant teaspoon salt
2 to 3 tablespoons butter – melted
In mixing bowl put in flour, salt, baking powder and whisk them
together. Add egg, melted butter and half of the milks. Blend
together and add remaining milk in small amounts until batter is a
smooth consistancy.
Cook on a hot griddle until golden brown, flip
and continue till golden brown on next side. This recipe doubles,
triples, ect. very easily.
Serve with favorite toppings. I like
homemade peach butter or maple syrup. You can also add chocolate
chips to cakes after pouring batter onto the griddle.
Hint: Testing baking powder is easy. Simply put a teaspoon in a small
bowl and add hot water– if it bubbles it’s good.
