This is a wee bit different from what semomom42 posted, hence the name…
Bunny Cake II
2-layer pkg spice cake mix3 carrots, shredded
8-oz can crushed pineapple in juice, drained
3/4 cup pecans, chopped
8-oz pkg cream cheese, softened
1/2 cup butter, softened
1-lb pkg powdered sugar
2 tsp vanilla
7-oz pkg flaked coconut, divided
few drops red food coloring
1/2 tsp water
decorations: 2 pieces red string licorice, 2 large flat gumdrop candies, 17 small gumdrops
Heat oven to 350°.
Prepare cake batter as directed on package.
Stir in carrots, pineapple and 3/4 cup nuts.
Pour into 2 9-in round pans sprayed with cooking spray.
Bake 25 to 30 min or until toothpick inserted in centers comes out clean.
Cool cakes in pans 10 min. Invert onto wire racks. Gently remove pans.
Cool cakes completely.
Cut 1 cake layer in half to form the ears. Arrange cakes on tray or large platter.
Beat cream cheese, butter, sugar and vanilla with mixer until well blended. Frost cake with knife or spatula.
Reserve 1/4 cup coconut.
Mix food coloring and water. Toss with remaining coconut until evenly tinted. Sprinkle over cake.
Add reserved coconut for the cheeks and inner ears.
Use licorice to make whiskers and mouth.
Large gumdrops for eyes, 1 small gumdrop for the nose, and the rest to outline the ears. Serves 16
