I make these for dinner as well as for appetizers or potlucks! When I make it for a meal, I serve it with a salad with a spicy vinagrette.
Buffalo Chicken with Creamy Blue Cheese Dip
1 lb chicken tenders
1/4 cup hot sauce
1/2 tsp paprika
1/4 tsp red ground pepper
5 – 6 oz nonfat plain Greek yogurt
1/4 cup blue cheese (crumbled)
ground black pepper (to taste)
1/4 tsp garlic powder
1/4 tsp onion powder
Preheat the oven to 375°F. Coat a baking dish with nonstick oil spray and set aside.
Mix the hot sauce, paprika, and cayenne pepper in a bowl.
Coat each tenderloin on both sides in sauce and set it in the baking dish in a single layer. Bake for 15 minutes, or until the chicken is no longer pink inside.
While chicken is cooking, make dip by mixing blue cheese, yogurt, pepper, garlic and onion powder until velvety smooth.
