Since we grow a lot of our food I am very seldom without green beans, corn, squash, zucchini, potatoes, onions, and frozen apples. That said I always keep a couple of cans of Salmon in the pantry for quick meals. My favorite bare bones meal is pinto beans (soup beans), cornbread, and potatoes.
Then I take the leftovers and fix refried beans for burritos and taco the next night. Then if I still have leftovers I use the pinto beans with some veggies and Salm0n patties. I am one of those people who can eat the same thing for several days and not get tired of it.
Of course, I love vegi nights. They are cheap and a way to eat healthier one or two nights a week.
