this recipe is really cheap if you grow your own tomatoes!
Bucatini with Roasted Tomato Sauce:idea:
2 lb tomatoes
4 garlic cloves, finely chopped
1/4 cup parsley
1/2 cup olive oil
salt and pepper to taste
1 lb pkg bucatini
Preheat the oven to 375°. Cut tomatoes in half. Remove seeds.
Place the tomato halves in a 9 X 13 in roasting pan, arranging them cut-side up in a single layer, as close together as possible. Scatter the garlic and parsley on top, then sprinkle with the olive oil, 1 tsp of salt and pepper to taste. Bake the tomatoes in the middle of the oven until they are very soft, nicely colored, and reduced in volume by about half, approximately 1 hour.
Cook the bucatini according to directions. Drain the pasta and toss it in the roasting pan with the sauce. Transfer to individual serving plates and serve.
4 servings = about 760 calories.
