Broiled Orange Roughy

      1 lime-quartered
      1 knob (1 inch) unpeeled fresh ginger
      2 tbsp no sugar added/low sugar apricot preserves
      2 tbsp low sodium soy sauce
      1 1/2 lb orange roughy fillets

      1. Preheat broiler. Line a broiler pan with foil. Spray broiler pan rack
      with non stick cooking spray.
      2. Put lime, ginger, preserves, and soy sauce into a food processor and
      combine until smooth.
      3. Place fish in a glass baking dish large enough to hold them in a single layer.
      Spread mixture on both sides of fish and set aside. Cover and
      let stand for 5-10 minutes.
      4. Transfer fillets to broiler rack. Broil 3-5 inches from heat 5-6 minutes.
      When done, remove from rack and plate.
