A few months ago, I was invited to a pot-luck dinner. I had planned to make a cheesy broccoli and rice casserole, but at the last minute I realized that I didn’t have enough brown rice. So I substituted millet. It was fabulous and here’s the recipe;-D
Broccoli with Rice and Millet
lb pkg frozen chopped broccoli
1/2 cup brown rice
1/2 cup millet
2 1/4 cups water
2 tbs butter
2 tbs flour
1 cup milk
1 cup shredded cheese (I used cheddar at the time, but use your favorite!)
salt and pepper to taste
Preheat oven to 350 degrees. Spray 1.5 qt casserole dish with spray. Mix rice and millet. Cook as you would brown rice — I use a rice cooker. Steam broccoli until crisp tender. Melt butter in saucepan, add flour and stir until blended. Add milk, stirring constantly and let simmer 4-5 minutes. Stir occasionally until thickened. Add cheese and stir until melted. Mix all ingredients together, pour into greased casserole dish and bake for 15 minutes or until bubbly. Remove from oven and let stand for 10 minutes. It will firm up and be ready to eat or travel. This is delicious hot or cold as the party discovered
