This is sooo good! It’s hearty enough for a cool weather meal, but light enough that you can serve it when the temps warm up!
Broccoli-Meatball Soup
16-oz pkg frozen chopped broccoli
4 small sweet onions, chopped
1 tbs butter
1/4 cup flour
2 cups chicken broth
1 cup heavy cream
1 lb ground chicken, rolled into meatballs (about 12) — can use meat of your choice or splurge and buy the pre-made
salt and pepper to taste
Melt butter in a large pot over medioum heat. Add onion, stir and saute for 2 minutes. If making your own meatball add and allow to brown by turning frequently and cooking for another 5 or 6 minutes. In separate bowl mix broth and flour. Add broccoli to the onions and stir in the broth and flour mixture (if using pre-made meatballs, add now). Simmer until soup thickens, then add cream. Season with salt and pepper to taste. Serve hot.
