Breakfast Tacos:103: 6 tortillas 8 eggs 2 tbs milk 6 bacon slices, cooked and crumbled 1 cup shredded Cheddar cheese In a medium size microwave-safe bowl, mix together well eggs and milk. Cover bowl with paper towel. Microwave on high for 3-4 minutes, stirring once after 2 minutes, or until cooked and fluffy. Heat tortillas as directed on the package. Spoon warm eggs onto each tortilla. Top with crumbled bacon and shredded cheese and fold tortilla. 6 servings. you can make these ahead and freeze them individually, then nuke when ready;-) if you decide to make ahead, don’t heat the tortillas or they’ll be tough when you nuke ’em.
