      Breakfast Potatoes
      4 cup cooked potatoes (peeled, diced to 1/8in pieces)
      1 cup onions, chopped
      4 tbs butter (or 3 tbs. vegetable oil)
      salt and pepper
      Toss potatoes with onions. Heat butter or oil in medium heat with a heavy skillet, and then add potatoes and onions.

      Fry until browned, about 10 minutes. Season with salt, pepper and paprika to taste. Serves 4
