1 whole wheat pita 1 egg 1/4 c spinach froze, fresh or canned (I use fresh so measure accordingly) 1/2 roma tomato 1 oz of motzerrella cheese dash of basil
heat the pita up and crack the egg in the center. Top with the spinach, cheese and tomato. Sprinkle with dried basil and bake till the cheese is melted.
Cut into 4 – 8 pieces and enjoy. I love these and since I always have pita’s it’s a very inexpensive breakfast for 1. For each additional person just keep adding the quantites. When I use frozen I just sprinkle them across.
