Breakfast Frittatas — Italian Style
10-12 eggs
olive oil
garlic (chopped)
zucchini (diced 3/4 inch)
broccoli (small fleurettes)
mushrooms (cut large mushrooms in quarters and cut small mushrooms in halves)
Italian herb seasoning
salt & pepper
thinly sliced tomatoes
fresh basil leaves
shredded mozzarella cheese
fresh cilantro leaves
Italian blend shredded cheese
Use a Use #10 Dutch oven
Sautee the veggies along with the seasonings for a few minutes and stir constantly (on bottom coals).
Add the mixed eggs.
Bake until the eggs are firm (coals top & bottom).
Now add the thinly sliced tomatoes topped with the basil or the cilantro leaves, and then add the shredded cheese.
Bake (with just top coals) until the cheese is completely melted, about a minute or so.
