I use a bread machine mainly because I am lazy and my kitchen is so small I don’t really have the space to do the kneeding. I follow the recipie in the book that comes with the machine. However, I add 2 TBS of powdered milk and 1 TBS of white vinegar and 1 whole egg.
This improves the protein level of the bread (I am hypoglycemic and need the protein) and the vinegar is said to increase the shelf life of the bread.
This bread keeps well for three days. It also tastes really really good.
