Bran-Buttermilk Muffins
1 1/2 cups Buttermilk
1 1/2 cups Bran Cereal
2 Tablespoons Sugar
2 Tablespoons Vegetable Oil
1 Egg, beaten
1 1/4 cups flour
2 teaspoons Baking Powder
1/2 teaspoon Baking Soda
1/2 teaspoon Salt
Combine buttermilk and cereal; let stand 5 minutes or until liquid is absorbed. Mix in sugar, oil, and egg.
Combine remaining ingredients and make a well in center of mixture. Pour bran mixture in this well. Stir until just moistened.
Spoon into muffin pans coated with cooking spray, filling two-thirds full. Bake at 400 degrees F for 20 to 25 minutes.
