Bolognese Meat Sauce Recipe
4 tablespoons butter
2 tablespoons olive oil
1 medium onion — finely chopped
1 carrot — grated
1/4 pound pancetta or Canadian bacon — diced
1 1/2 pound ground beef
salt and pepper
1 cup dry white wine
28 ounces crushed tomatoes
1/2 cup milkCombine the butter and oil in a large saucepan. Heat until melted over medium heat. Add the onion, grated carrot and pancetta.
Heat until onions are lightly browned, stirring occasionally. Add the ground beef. Stir, cooking until no longer pink.
Season to taste with salt and pepper.
Increase heat to medium-high and add wine. Simmer until wine has evaporated. Drain tomatoes and add to meat sauce.
Reduce heat to medium-low, cover and simmer for 1 hour or until sauce thickens. Stir occasionally. Add the milk and cook for 3-4 more minutes.
Serve over your favorite pasta.
Serves 6
