Boiled Red Potatoes
Boil 4 lb red potatoes with skin and reserve half for use later in the week. Season the ones you plan to eat right away with salt, pepper, margarine and a sprinkle of parmesan.
Hot Potato Salad
Slice reserved potatoes about 1/4″ thick and saute in 2 Tbs olive oil about 5 minutes or until heated thoroughly. Drain any excess oil and place in serving bowl. Mix 1/3 cup each light mayonnaise and bottled Italian dressing.
Pour over potatoes. Stir in 1/2 cup chopped onion or scallions.
