Boiled Potatoes
Double a batch of potatoes that you would serve with butter and parsely. Save half for the next recipe.Potato-Spinach Chowder
4 tbs butter or margarine
4 tbs flour
2 cups milk
leftover boiled potatoes, diced
10 oz pkg frozen chopped spinach, defrosted and drained
salt and pepper to taste
In large saucepan, melt butter over medium heat. Add flour and stir until a paste forms. Gradually add milk while stirring constantly. Heat just until steam starts to rise, about 4 minutes, stirring occasionally.Carefully add potatoes and continue heating, stirring occasionally about 6 minutes. Stir in spinach and cook for an additional 5 minutes. Serve!Can top with shredded cheese if desired. You shouldn’t need a salad or sandwich on the side…this is very filling;-)

This recipe works very well with broccoli too.You are true to saying this recipe is a meal in it self.

chopped broccoli is excellent! lol! whenever i get a taste for potato chowder, i’ve used whatever veggie i have on hand;-) carrots give a nice flavor too, but spinach is my favorite and dds, too.and if you have trouble getting someone to eat brussels sprouts? quarter them and toss them in…they’ll never know and i won’t tell;-)
