1 1/2 cups unsifted flour
3/4 cup sugar
2 tsp. baking powder
1/2 tsp. salt
3/4 cup quick-cooking oats
1/3 cup vegetable oil
2 eggs, slightly beaten
1 cup mashed bananas
1 cup fresh or frozen blueberries (do not thaw
Mix flour, sugar, baking powder and salt.
Stir in oats. Add oil, eggs,
bananas, and blueberries, stirring just until mixed. Pour batter into one
greased 8-1/2 by 4-1/2 inch loaf pan.
Bake at 350?F for about 60 minutes.
Let cool in pan for 10 minutes, then
remove from pan to a wire rack. When cool, wrap and refrigerate for several
hours before slicing.
Note: I check this with a cake tester and bake it until it is no longer
“doughy” near the center. Cover with a tent of foil if it browns to quickly
and still needs more baking time.
If you’re using frozen berries, it will
take longer to bake.
As many times as I’ve made this, I have yet to “wait” to slice this. It’s
awesome when it’s still warm! Enjoy!
