BLENDER BANANA BREAD
2 large eggs
1/2 c. vegetable shortening
2 ripe bananas, sliced
2/3 c. granulated white sugar
1-3/4 c. all-purpose flour
3/4 tsp. baking soda
1-1/4 tsp. cream of tartar
1/2 tsp. saltPreheat oven to 350 degrees F. Grease or spray an 8×4-inch loaf pan. Combine eggs, shortehing, bananas, and sugar in glass container of blender. Cover and blend about 30 seconds, or until smooth. Sift dry ingredients together into a bowl. Pour blender combination over dry ingredients. Stir only to combine. Pour into prepared loaf pan. Bake about 45 minutes until lightly browned. Turn out of pan and cool on rack. Store wrapped tightly in refrigerator or freezer.

I made this banana bread last night. It was a very quick assembly recipe, and my husband, whose highest praise for a recipe is usually “Not bad,” described it as “Very good!”
