Blackberry cobbler1/2 cup melted butter
1 cup all-purpose flour
1 cup sugar
1 1/2 tablespoons baking powder
1/8 teaspoon salt
3/4 cup milk
1 teaspoon vanilla
4 cups fresh blackberries or 2 10-ounce packages frozen (thawed and
well-drained)
Heat oven to 375 degrees.
Pour butter into wide, shallow 2-quart casserole (such as a 9-by-13-inch
pan), and set aside.
In large bowl combine flour, sugar, baking powder and salt. Add milk and
vanilla. Stir well to make a thick batter. Fold in berries.
Spoon mixture onto the melted butter in the casserole, but do not stir. The
batter and fruit just sort of plop down, with pockets of melted butter poking
out here and there. Bake uncovered 40 to 45 minutes, or until golden brown
and cobbler tests done in the center. Serve warm with vanilla ice cream, if
you wish.
