      2 cans (14.5 oz) or 1 can (28 oz) whole peeled tomatoes, drained & quartered (reserve 1/2 can juice)
      1 can (15.5 oz) black-eyed peas, rinsed & drained
      1 cup whole kernel corn
      1/3 cup diced red onion
      1 jalapeno pepper, seeded & chopped
      2 Tbs vinegar
      1 Tbs olive oil
      1/2 tsp oregano
      salt & pepper to taste

      Combine ingredients. Chill. Serve on lettuce if desired. Makes 4-6 servings.
