1 onion, chopped
1/3 cup chopped bell pepper
1 Tbs chopped jalapeno peppers
2 (15oz) cans black-eyed peas, drained
3 Tbs all-purpose flour
1 (10oz) can diced tomatoes & green chiles
4 oz reduced fat Monterey Jack cheese, shredded
Saute onion, green pepper & jalapeno over medium-low heat until tender, about 5 minutes. Add black-eyed peas & stir in flour. Graduallu add tomatoes & chiles & cheese, stirring until melted & heated thoroughly. Serve hot.
