Black Bean, Pomegranate and Avocado Salsa
2 cups leftover black beans, rinsed and drained
2 cups pomegranate arils
1 jalapeno, minced, seeds removed
1/4 cup red onion, chopped
1/4 cup cilantro, chopped
1 avocado, diced
2 tbs lime juice
sea salt to taste
black pepper to taste
Take out a bowl and combine all ingredients. Carefully stir until thoroughly mixed and serve. Serves 6.
