16-oz pkg. medium seashell pasta
8 oz fresh mushrooms, sliced
7 tomatoes, sliced
3 garlic cloves, minced
2 tbs olive oil
3 tbs butter
3 tbs flour
1 cup evaporated milk
1/4 tsp salt
1/4 tsp black pepper
2 1/2 cup cheddar cheese, shredded and divided
2 tbs fresh basil, snipped
1 cup Parmesan cheese, grated
Preheat oven to 350 degrees F. Cook pasta according to package directions.Drain and set aside in a large bowl. In a large skillet sauté mushrooms and tomatoes with garlic in olive oil until tender. Add to pasta.
Mix well. Melt butter in saucepan over medium heat. Add in flour, salt, pepper and milk.
Cook and stir until mixture thickens and boils. Remove from heat and add 1 cup cheddar cheese until melted. Add basil.
Mix sauce with pasta and vegetables. Pour in greased baking dish. Sprinkle remaining cheese.
Bake for 25 to 30 minutes or until cheese is lightly browned. Serves 3-5, depending on if you use it as a main dish or a side. As a main dish, serving with a salad is good.
As a side, it goes well with just about anything. Big View offers it as a meal with a side salad or with as a most popular side to fried catfish. YUM!!
