      Best Beefy Taco Salad*
      1 lb ground beef
      1 onion, chopped
      3 cloves garlic, minced
      1 jalapeno pepper, minced
      2 tbs taco seasoning mix
      1 cup beef stock
      1 cup salsa
      1 cup French salad dressing
      15-oz can kidney or black beans, rinsed and drained
      8 cups mixed lettuce
      1 red bell pepper, chopped
      1 yellow bell pepper, chopped
      4 tomatoes, chopped
      2 avocados, peeled and cubed
      1 cup shredded Pepper Jack cheese
      1 cup shredded Cheddar cheese
      1 cup sliced black olives
      1 cup sour cream
      2 cups crumbled nacho tortilla chips OR tostada shells
      In a large skillet, cook ground beef with onion, garlic, and jalapeño, stirring to break up meat. When meat is browned, drain well.
      Add Taco Seasoning Mix, beef stock, and salsa and bring to a simmer. Simmer, stirring frequently, for 5 to 7 min until thickened. Remove from heat and stir in French dressing.
      Make the salad now, or cool and refrigerate this mixture.
      To make the salad, combine lettuce with beans, bell peppers, and tomatoes in a large serving bowl.
      Top with the beef mixture.
      Top with avocados, cheeses, olives, sour cream, and tortilla chips and serve immediately.
      Instead of the chips, serve this salad in Tostada shells that can be found at the grocery store. Just warm the shells as directed on the package and serve this salad in them. Serves 6-8
      *Much of this can be prepared ahead of the camping trip and placed in the cooler. This is a great first-night meal at the camp-site!
