Beef Cashew Stir-Fry
1/4 cup soy sauce
2 tbs honey
1 tbs cornstarch
5 garlic cloves, minced
3/4 cup cashews, raw
2 tbs sesame oil
2 cups leftover beef, cut into cubes
1 cup cherry tomatoes, halved
1 onion, chopped
In a bowl, whisk soy sauce, honey, cornstarch, and garlic. Set aside. On low heat, toast the cashew in pan, stirring to keep them from burning.
Remove from the pan and set aside. In the pan, heat the oil and add the beef. Cook for about 5 minutes.
Add in the vegetables and cook for an additional 5 minutes or until veggies are tender and beef is thorougly heated. Add the sauce and cashews. Cook for another two minutes.
Serve alone or with brown rice. Serves 8.
