      next time you prepare a chuck roast and pork chops, cut off about 1/2 of the roast and save two or three of the pork chops to make this great smelling sauce. really! just the smell alone will have your mouth watering!

      Beef and Pork Ragu:bounce:
      1/4 dried mushrooms or 1 cup fresh or canned (what’s in your cupboard!) [see note below]
      1/2 lb boneless beef chuck, trimmed of fat
      1/2 lb boneless pork, trimmed of fat
      3 tbs butter
      3 green onions, chopped
      1 celery rib with leaves, very finely chopped
      1 small carrot, very finely chopped
      2 tbs parsley
      1/8 tsp ground cloves
      1 tbs flour
      3/4 cup meat broth
      2/3 cup dry white wine
      salt and pepper to taste
      1-in strip lemon zest
      Soak the mushrooms in 1 cup warm water for 30 minutes.

      Meanwhile, cut the meat into 1/2-in dice. Drain the mushrooms, reserving the liquid. Squeeze the water out of the mushrooms and then chop them.

      Strain the liquid through paper towels. Melt the butter in a large pan over medium-low heat. Add the green onions, celery, carrot, and mushrooms. Increase the heat to medium and saute until lightly colored, about 5 minutes.

      Stir in the parsley. Reduce the heat and add the mean. Brown it lightly, about 5 minutes.

      Stir in the cloves and flour. Pour in the mushroom liquid [see note below], broth and wine, and season. Twist the lemon zest to release its oil and add to the sauce.

      Stir, cover, and simmer at the lowest heat until the meat begins to disintegrate and thickens the sauce, 2 1/2-3 hours, stirring occasionally. If the sauce is not thick enough, remove the cover and let it evaporate gently. Makes about 2 1/2 cups = about 315 calories per 1/2 cup.
      note: if using fresh mushrooms, increase meat broth by a cup.

      if using canned, save the liquid and add with other liquids.
      this is so good over rigatoni — or whatever is in your cupboard! lol!

      oh do! your family will walk in the door and beg to eat! LOL!

      I’m not kidding! you know that feeling when you walk in the door and smell dinner in the crockpot? well, you’ll get the same with this!

      and it works on any pasta you choose. however, the thicker tube-like pasta is the best, since it ‘grabs’ the sauce;-)
