ParticipantBeef and Barley Soup
1 ls ground beef
1 onion, diced
15-oz can beef broth
1 cup water
15-oz can mixed vegetables
1 bay leaf
1/4 tsp rosemary
1/4 tsp thyme
1/4 cup quick barley
salt and pepper, to taste
Heat a large pot, add a pinch of salt and lightly brown the hamburger. Drain grease from hamburger using a colander and dispose of grease in a proper waste receptacle. Return hamburger to the pot, add remaining ingredients, bring to a boil, then lower the heat and simmer for 10 minutes stirring occasionally. Remove bay leaf before serving. Servings: 4

This Sounds good..I love Okra in My beef and Barley Soup Gonna Have to try this without the okra..Thanks for sharing

ParticipantI love okra, too, and can eat it in any fashion. My DD was always challenging me to cook meals on the campfire like I would prepare at home. One year I took up the challenge to make soup as we were camping in January and I knew that an ice storm was coming. Not a problem — we put up the dome tent (it iced over like an igloo and we were sitting around in our underwear because we were so warm) and we climbed trees to hang a tarp over the camp fire to protect it! LOL! Needless to say, I won that challenge!
The proper receptacle in this case was to pour the grease on the fire. My suggestion for the other ingredients is to dump them all together at home in one container and add to the pot all at once. This is a good first night meal on a camping trip…especially one during the winter (or ice storm!).
