This is a camping recipe and much different from my other posts in Jar Gift and Dump Recipes…
Bean Soup II
In a big pot add1 can vegetable broth
2 cans chicken broth
2-3 cans of water
bring this to a simmer and add
1 can tomato sauce
1 can Rotel tomatoes and chilies
1 tbs fresh chopped sweet basil or 1 tsp dried
1 tsp Italian seasoning
1 tsp thyme
1/2 tsp celery seeds
1/2 tsp red pepper flakes
1/2 tsp rosemary
1/2 tsp sesame seeds
1 tsp salt
While the spices are simmering prepare and add the veggies —
3 medium carrots, sliced
3 stalks celery, sliced
1 bell pepper, chopped
1 large onion, chopped
In a skillet, brown 2 lbs ground meat (Italian sausage, pork, turkey), drain and add to pot.
1 can butter beans
1 can cannellini bean
1 can dark kidney beans
1 can light kidney beans
After draining, run water over them until the bubbles stop.Add the beans to the pot and throw in a handful of large egg noodles. Cover and simmer for one hour. Servings: 10-12
