Bean Soup
In a big pot add:
1 can vegetable broth
2 cans chicken broth
2-3 cans of water
Bring this to a simmer and add
1 can tomato sauce
1 can Rotel tomatoes and chilies
1 tbs fresh chopped sweet basil or 1 tsp dried
1 tsp Italian seasoning
1 tsp thyme
1/2 tsp celery seeds
1/2 tsp red pepper flakes
1/2 tsp rosemary
1/2 tsp sesame seeds
1 tsp salt
While the spices are simmering prepare and add the veggies
3 medium carrots, sliced
3 stalks celery, sliced
1 bell pepper, chopped
1 large onion, chopped
In a skillet, brown 2 lbs ground meat (Italian sausage, pork, turkey), drain and add to pot.While this is all simmering, open the beans and put them in a strainer in the sink to drain.
1 can butter beans
1 can cannellini bean
1 can dark kidney beans
1 can light kidney beans
After draining, run water over them until the bubbles stop. This helps remove the gassy effect of beans. Add the beans to the pot.Cover and simmer for one hour. Servings: 10-12
