      Home Canning

I love to can in the summer for next winter but I have a dilemma. I usually freeze peas but I thought this year I would can them. I was washing the jars and putting the rings back on them and I noticed that the pea juice was a little murky. Since I have never canned peas I thought I might ask all of you for your thoughts. Thank you in advance for your help.

Hello and Welcome to Budget 101, BBear aka Marsha! Good to have you here. Enjoy! About your dilemma — Murky? — do you mean cloudy? Hard water can make the water in home canned goods appear cloudy. Did you use salt? This can also leave your canned goods cloudy. (Not necessary to use any kind of salt.) Peas are a starchy food so that could just be the reason for cloudiness. Hope this helps. Just curious, why are you putting the rings back on? Thanks; Virginia
