Basil Chicken and Veggies
3 tbs olive oil
salt and pepper to taste
2 cups leftover chicken, cut into bite-sized pieces
1 red bell pepper, washed, cored and chopped
8 oz mushrooms, cleaned and sliced
2 cups washed, stemmed and sliced zucchini or other summer squash
3 cloves garlic, minced or pressed
8 oz fresh basil, chopped
In a large skillet on high heat, bring 3 tbs olive oil to a shimmer.
Add the chopped red bell pepper, 8 oz sliced mushrooms, 2 cups sliced zucchini or other summer squash, stir and continue to cook.
When veggies are nearly cooked, push to one side and add the 3 cloves minced garlic. After about 30 sec, stir it all together and add the 8 oz chopped fresh basil.
Add the cooked chicken and stir well.
Continue cooking for a min or two until chicken is thoroughly heated. Add salt and pepper to taste. Serves 3-4
