      This is a basic recipe for preparing chicken for a variety or meals — casseroles, salads, soups, and/or stews.
      Basic Chicken Breasts
      6 to 8 chicken breast halves, or as many as you need for a recipeextra virgin olive oil
      salt and pepper
      seasonings of your choice, based on your plans
      Heat oven to 350°.
      Line a baking pan with foil and oil lightly.
      Wash chicken and pat dry.
      Arrange chicken breast halves on the foil and brush lightly with olive oil. sprinkle with salt and pepper. Sprinkle seasonings over the chicken, if desired.
      Bake for about 22 to 28 minutes, depending on the thickness of the chicken breasts. Makes 3 to 4 cups diced chicken.
