ParticipantThis simple sauce makes the right amount for two people to serve over chicken, eggs, fish, pasta, or veggies.
Basic Bechamel Sauce
2 tbs unsalted butter
2 bsp all-purpose flour
1 cup hot milk (zap in Microwave on high for 1 minute)
1/4 tsp dried mustard
Salt and ground white pepper to taste
Melt butter in a heavy saucepan over low heat. Whisk in flour and cook for 4 – 5 minutes, whisking frequently.
Whisk in hot milk and increase heat to medium-high. Continue stirring almost constantly until sauce thickens and begins to bubble.
Remove from heat and season with mustard, salt, and pepper. (Note: White pepper is used because it’s milder than black pepper and can’t be seen in the sauce. Black pepper is perfectly acceptable.)

ParticipantI don’t know your mom’s recipe, but using this recipe and 1-3 different kinds of shredded cheese will yield a most fabulous, creamy mac and cheese dinner or side.
Personally, I prefer to use a Mexican blend, mozzarella, and parmesan to make my mac and cheese the most fabulous comfort food
