This simple sauce makes the right amount for two people to serve over chicken, eggs, fish, pasta, or veggies.
Basic Bechamel Sauce
2 tbs unsalted butter
2 bsp all-purpose flour
1 cup hot milk (zap in Microwave on high for 1 minute)
1/4 tsp dried mustard
Salt and ground white pepper to taste
Melt butter in a heavy saucepan over low heat. Whisk in flour and cook for 4 – 5 minutes, whisking frequently.
Whisk in hot milk and increase heat to medium-high. Continue stirring almost constantly until sauce thickens and begins to bubble.
Remove from heat and season with mustard, salt, and pepper. (Note: White pepper is used because it’s milder than black pepper and can’t be seen in the sauce. Black pepper is perfectly acceptable.)

I don’t know your mom’s recipe, but using this recipe and 1-3 different kinds of shredded cheese will yield a most fabulous, creamy mac and cheese dinner or side.
Personally, I prefer to use a Mexican blend, mozzarella, and parmesan to make my mac and cheese the most fabulous comfort food
