      Barley Soup
      1 qt chicken stock
      1 cup bite-sized cooked chicken
      1 onion, sliced into rings
      1 rib celery, chopped
      1 parsnip, sliced thin
      1 cup pearl barley
      1 tsp dried basil
      1/4 tsp white pepper
      1 dash salt
      1/4 cup shredded carrot
      Combine all ingredients in crockpot, except salt and carrot, and cook on low 4-6 hours. Add salt and carrots during the last hour. Season to taste.

      This soup is rich in protein, carbohydrates, and fiber.
