      Barley Orange Salad
      15-oz can mandarin oranges, drained, reserving juice
      3/4 cup quick cooking barley
      1/4 tsp salt
      1/2 cup water
      3 tbs sugar
      1 tbs honey
      2 cups orange juice
      1 cup orange flavored yogurt
      3/4 cup heavy whipping cream
      2 tbs powdered sugar
      1-3 tsp curry powder
      Drain oranges, discarding juice. Combine barley, salt, water, sugar, honey, and orange juice in medium saucepan. Bring to a boil.

      Reduce heat to low. Cover pan and simmer for 15-20 minutes until barley is tender. Drain if necessary.
      Add yogurt and oranges to barley.

      Let cool in refrigerator for 30 minutes. In small bowl, beat cream with powdered sugar and curry powder until stiff peaks form. Fold into cooled barley mixture.

      Cover and chill for at least 4 hours before serving. 6 servings

      This certainly sounds interesting. What do you recommend serving with this…at which meal?

      I usually make it with a pork dish and I’ve had it for breakfast the following morning! LOL! It makes a good summer-time breakfast. Filling, but not bogging you down on those hot days;-D
