ParticipantThere is a great little mom and pop kind of place in Lexington, ky. it’s sort of an all-in-one kind of place. you can get gas, snacks, or a meal.
i passed through this haven a gazillion years ago. i stopped to get gas and being a wee bit hungry, i decided to get the gas, park, and stop in for a quick snack. everything on the menu looked fabulous, but i was not hungry for a full meal!
they had an appetizer that was a spread with your choice of pita or tortilla quarters. i ordered with pita! i have to say it was a fabulous spread that i think i have perfected, but…i can’t remember the name of this really cool place.
so, if any of our lexington, ky, members know what i’m talking about… this is the best approximation that i can come up with and i truly think that you could dip veggies even though they referred to it as a spread!
this recipe serves enough to serve a party, whether you choose to spread it on crackers, pitas, tortillas, or dip veggies;-d
barbecue-bacon spread
2 8-oz pkg cream cheese, softened
1/2 cup your favorite bbq sauce, or make your own
1/2 lb bacon, cooked and chopped
1 tomato, chopped
1/2 cup chopped green peppers
3 green onions, sliced
1 cup cheddar cheese, shredded
Spread cream cheese onto platter.
Drizzle with barbecue sauce.
Top with remaining ingredients.Serve it as you like…
