Here’s a healthier snack recipe that is perfect for the summer, they’re bits of fresh pineapple, banana and strawberries with just enough chocolate to hold them all together, these are so delicious!!
1/4 lb Cored Fresh Pineapple
6 Strawberries, cut in half
1 cup semi-sweet Chocolate Chips + 1 Tbs Solid Coconut Oil or Vegetable Shortening
1/4 cup Chopped Peanuts, pecans OR walnuts
Popsicle Sticks (or skewers)
For each strawberry half, cut an equal size piece of banana and pineapple.
Cut 2 of the bananas in half lengthwise and slide a popsicle stick into the halves, careful not to break them.
On top of each banana half, Place a chunk of pineapple on first, a chunk of banana and a strawberry half.
Place in freezer for 10 minutes.
Line a plate with wax paper or parchment paper.
Put chopped nuts in small plate to use for dipping.
Combine chocolate & Coconut Oil by heating in microwave for 30 seconds, stirring and repeating until melted and smooth. do not overheat the chocolate as it will separate.
dip cold fruit in chocolate, then into nuts, then place on prepared tray. return to fridge for 10 minutes to fully harden and set the chocolate.
