Banana Cream Coffee Cake
6 ounces Cream Cheese
1/3 cup Sugar
1 Tablespoon Flour
1/2 teaspoon ground Nutmeg
1 Egg
1/2 cup Butter, softened
1 1/2 cups Sugar
2 Eggs
1 teaspoon Baking Soda
3 Tablespoons hot Water
3 cups Flour
1 teaspoon Baking Powder
1/2 teaspoon Salt
1/2 teaspoon ground Nutmeg
1/2 teaspoon ground Cinnamon
1/3 cup Orange Juice
1 teaspoon Vanilla Extract
3 mashed Bananas
1 cup chopped Pecans
1 Tablespoon Butter, melted
1 Tablespoon Sugar
1/4 teaspoon ground Cinnamon
Combine the first four ingredients and beat until smooth. Add one egg, mix well. Set this aside.
Cream 1/2 cup butter and 1 1/2 cups sugar, add 2 eggs (one at a time) beating after each addition. Combine baking soda and water in small glass and pour into creamed mixture, mixing well. In another bowl; combine flour, baking powder, salt, 1/2 teaspoon nutmeg and 1/2 teaspoon cinnamon. Add these dry ingredients to the creamed mixture alternately with juice, beginning and ending with the dry mixture. Stir in vanilla, bananas and pecans.
Spoon 1 1/2 cups banana mixture into a greased and floured 10 inch Bundt pan. Spread cream cheese mixture over the banana mixture and then spoon the remaining banana mixture over that. Bake at 350 degrees F for 50 to 55 minutes; let cool 10 minutes and remove from pan. Cool completely on a wire rack.
Brush with melted butter. Combine 1 tablespoon sugar and 1/4 teaspoon cinnamon in a small shaker bottle and sprinkle over the cake.
