      Banana Bread with Variations

      1 cup butter, softened
      2 cups sugar
      4 eggs
      1/2 tsp salt
      2 tsp baking soda
      4 cups all-purpose flour
      6 bananas, very ripe, mashed
      1 cup pecans or walnuts, chopped

      Heat oven to 325°.

      1. Grease and flour two 9x5x3-inch loaf pans.
      2. In a mixing bowl with an electric mixer, cream butter and sugar until light.
      3. Add eggs, one at a time, beating after each addition.
      4. Sift dry ingredients together.
      5. Add dry ingredients to creamed mixture, beating until blended.
      6. Stir in bananas and chopped pecans or walnuts.
      7. Spoon the batter into the prepared loaf pans.
      8. Bake for about 1 hour and 15 min, or until a toothpick or cake tester inserted into the center comes out clean.  20 Slices

      Vegan Banana Bread

      Banana Bread Variations:

      • Make a simple vanilla icing to drizzle over the banana bread. Just prior to serving, add fresh sliced banana to the top.
      • Add 1 cup of chocolate chips, mini chocolate chips, dried cranberries, dried cherries, chopped dates, or raisins to the batter.
      • To make an orange cream cheese spread, beat 4 oz of softened cream cheese with the 1 tsp of orange zest, 1 to 2 tbs of confectioners’ sugar to taste, and a few drops of vanilla extract. Beat until light and fluffy. Refrigerate and let the cream cheese come to room temperature before spreading.
      • To make a maple butter spread beat 4 tbs of softened butter with 2 tbs of dark maple syrup.
