Banana Bran Muffins
1 cup bran cereal flakes
1 cup all-purpose flour
1 large, ripe banana, mashed (about 2/3 cup)
1/2 cup honey
1/4 cup milk
2 tbs butter or margarine
2 tbs yogurt (plain or vanilla)
1-1/2 tsp baking powder
1/2 tsp salt
1/4 tsp baking soda
3/4 tsp cinnamon
Preheat oven to 375 degrees.
Combine the bran flakes and milk in a bowl, and set aside.
In a second bowl, combine all of the remaining ingredients.
Add the bran flakes and milk to the mixture.
Stir one to two minutes, or until well mixed.
Spoon the batter into a greased muffin tin, filling each cup 2/3 full.
Bake 20 minutes, or until tops are springy to the touch. Yield: 12 muffins
