Have very ripe bananas?
Instead of making banana bread or muffins, make this instead!
Banana and Vanilla Wafer Pudding Parfait
5 egg yolks
1/2 cup sugar
1/4 cup cornstarch
2 cup whole milk
2 tsp vanilla
2 tbs butter
4 ripe bananas, sliced
20 vanilla wafer cookies, broken into pieces
1 cup cold heavy cream
1/4 cup powdered sugar
To make the pudding, whisk the egg yolks, sugar, and cornstarch together until smooth and set aside.In a medium pot, heat the milk until boiling. Remove from heat, pour into a measuring cup, and slowly add it to the egg mixture, whisking constantly. Pour the milk and egg mixture into a clean pot and whisk over medium heat until it thickens.Make sure to whisk constantly to prevent lumps. Spoon the hot pudding into a bowl and add the vanilla and butter. Whisk until the butter is melted.
Cover and refrigerate for at least 2 hours.
When the pudding is cool, assemble the parfaits in a dish as follows: half the pudding, half the cookies, half the bananas. Repeat with remaining ingredients.
Make the whipped cream by whipping the cream and sugar together until the cream forms soft peaks. Spoon on top of pudding and sprinkle with cookie crumbs.Serves 4-6
