Baked Sweet Potatoes
Prepare and bake as you usually do, just make a double batch and reserve for use later in the week.
Sweet Potato Surprise
Remove the skins (if still on) from sweet potatoes and put into a saucepan large enough to hold potatoes and the milk you will be adding. Mash potatoes and over low heat stir in 1 tsp margarine per potato until well blended. Then stir in enough milk until a smooth, yet stiff consistency is achieved.
Cool slightly and fill lined muffin tins 3/4 full. Top with any of the following (or all if you desire) — 1/2 tsp brown sugar, 2-3 mini marshmallows, 2-3 chocolate chips, anything else you can think of that would be great on top! Place muffin tins under the broiler, just until the top is starting to bubble and brown, 2-3 minutes is all it usually takes.
Cool, but serve warm as dessert.
