Bacon-Wrapped Hot Dogs
6 beef hot dogs
6 strips bacon
6 hot dog buns
For the Cheese Sauce:
1/2 stick unsalted butter
2 tbs flour
1 1/2 to 2 cups cheddar cheese
1 1/4 cups milk
3 tbs pickled jalapenos, diced
1 tsp mustard powder
1/2 tsp onion powder
1/2 tsp salt
3 to 4 dashes hot sauce
In a saucepan, melt butter and add flour, stirring well to form a roux. Cook for about 1-2 min.
Add milk 1/2 a cup at a time while whisking mixture together.
Add cheese and all ingredients except, jalapenos. Whisk until thick and melted through.
This process should take about 8-10 min total.
Once cheese sauce has reached a good thick consistency, add jalapenos and stir through.
Keep cheese sauce on a warm setting until the hot dogs are cooked.
Preheat grill for medium-high heat.
Wrap each hot dog with a strip of bacon. May need to cut bacon to fit.
Place hot dogs onto the grill and cook for 8 min occasionally turning until the hot dog is cooked and bacon is good and crisp.
Remove from heat, place into a warmed hot dog or deli bun, top with cheese sauce and serve.
