1 sliced leek
4 slices turkey bacon, cooked and crumbled
8 eggs, beaten with 2 Tbsp milk
3/4 cup shredded low-fat cheddar cheese
(and I also use 2 sliced green onions)
Heat oil in pan. Add leek and bacon and saute for a couple minutes. Top with most of the cheese (Save some for the last minute).
Pour eggs on top. Reduce heat to medium-low, cover and cook for ten minutes, or until all but the middle of the eggs are set and puffy. Remove from heat and let sit for a few minutes.
Sprinkle remaining cheese on top and serve.
*Note: I don’t cook with salt or pepper automatically, so use your own taste buds as your judge.

Sounds yummy. We make something that we like to call a mix up. It’s alot like this and we also add hashbrowns.
