Bacon Corn Cakes

      6 slices bacon — cut in 1/2″ pieces
      1/3 cup chopped onion
      1 cup all purpose flour
      2 tablespoons chopped fresh chives
      1 teaspoon baking powder
      1/2 teaspoon salt
      1/8 teaspoon cayenne pepper
      2/3 cup milk
      1 egg slightly beaten
      1 tablespoon vegetable oil
      8 oz. can whole kernel corn, drained
      1/2 cup (2 oz.) shredded Monterey Jack cheese

      Cook bacon & onion over medium heat in a small frying pan until bacon is browned.

      Meanwhile combine flour, chives, baking powder, salt and pepper. Stir in milk, egg and oil until moistened. Stir in bacon and onion and remaining ingredients.

      Cook the same as you would pancakes.

      Serve with warm maple syrup.
