Really need to be good this week! LOL! Spaghetti last week and yesterday had fried chicken not grilled hamburgers, and potato salad — not my lo-cal version!
I ended up contributing coleslaw;-D Hope everyone had a safe and happy holiday!
Due to some unplanned expenses, preparing some low-cost repeat salads…sigh…
Sunday — basil chicken salad over spinach…185 calories…$3.21
Monday — Mediterranean tuna salad over red leaf lettuce…152 calories…$2.40
Tuesday — tuna salad sandwich…116 calories…$.80
Wednesday — lime and cumin bean salad over Romaine…178 calories…$2.97
Thursday — egg salad sandwich…77 calories…$.47
Friday — BBQ chicken salad over spinach…113 calories…$1.60
Saturday — veggie-stuffed pita…268 calories…$2.97
After Thursday’s dinner, I may not be feeling full, but I love having egg salad on whole wheat toast for breakfast. Sooo…I’ll make the egg salad Wednesday night while waiting for the seasonings to meld for that salad and I’ll have breakfast and dinner ready!
total dinner calories — 1089 and total food grocery bill — $14.42! Woo Hoo!
